Picked Overripe for Sweetness: We harvest our cherries at full ripeness—sometimes even slightly overripe—giving our beans a much higher Brix sugar content. The result? A coffee that is naturally sweeter, smoother, and low in acidity.

Rooster Farms is located in South Kona on the Big Island of Hawai‘i. We were one of the very first roasters in Kona, starting in the early 1970s—a full decade before the U.S. “Third Wave” of coffee even began. For over 50 years, we’ve been focused on maximizing flavor through craftsmanship and respect for the bean.
